This is my version of the viral carrot ribbon salad I’ve been seeing everywhere. The other recipes I’ve tried are good but weren’t quite *it* for me. So of course I made my own version. Bursting with Asian flavors, this addicting carrot ribbon salad is going to be your new favorite way to get more raw veggies in your diet.

Bursting with Asian flavors, this carrot ribbon salad is going to be your new favorite way to get more raw veggies in your diet.

Ingredients

  • 5 lb Carrots (whole)

  • For the Sauce
  • 1 tsp Black Vinegar

  • 2 tbsp Brown Sugar

  • 1 tbsp Fish Sauce

  • 1 tsp Garlic Powder (or fresh, grated)

  • 4-8 Green Onions (sliced)

  • 1 tbsp Ground Ginger (or fresh, grated)

  • 2 tbsp Honey Ginger (or an additional 1 tbsp brown sugar)

  • 1/4 cup Rice Vinegar

  • 1/2 cup Soy Sauce

  • 2-4 tbsp Spicy Chili Crisp (omit if you don’t want it spicy)

  • 1/4 cup Toasted Sesame Oil

  • 1/4 cup Toasted Sesame Seeds

Directions

  • Mix all sauce ingredients in a small to medium mixing bowl and set aside.
  • Wash and peel the carrots. Leave any tops intact as this will make creating the ribbons easier. Alternatively, you could use prepped wavy cut chips or matchsticks from the grocery store to skip the peeling and chopping.
  • Place the carrots in a large mixing bowl.
  • Pour the sauce mixture over the carrots and massage the sauce into the carrots (this is where the optional gloves come in). Do this for 3-5 minutes, ensuring that the sauce gets on every piece of carrot.
  • Your carrot salad can be enjoyed immediately. For the best flavor, let the carrots marinate in the fridge in an airtight container for 2 -12 hours.
  • Store in the fridge in an airtight container for up to a week.

Notes

  • Honey Ginger is simply ginger that’s been fermented in honey. Place unpeeled slices of clean, organic ginger into a glass jar and cover with honey. Let it sit and ferment, burping every other day, for about a month and enjoy. This recipe calls only for the honey. The ginger is also edible.
